Trying to make a profile, I can't find the "fine pan" and "fine tilt" in the edit list. So, what is the way to add these parameters.

In the channel setup window's subchannel table, set the resolution or number of bytes of the pan subchannel to 2. There are no longer separate fine subchannels. Instead, the conversion from a floating point level to DMX is either to 8 bits or 16 bits depending on the resolution setting for the subchannel.
The bytes/resolution column is designated by the greek letter rho. The + column is the offset from the base dmx address.

I don't understand . I would need to 2 pan. one with rho at 1 and one with rho at 2 ? Can't have 2 pan. what should i add right after adding pan that i could put rho at 2 ? I have to admit that I'm a little bit lost...

Perhaps you could show me how it looks in the subchannels table. It's like I can have either pan corse or fine but not both ???

Use one of the built-in profiles and look at that.
Select a channel either by clicking or by typing its number.
Select Channel->Setup Hilited Channels...
Select the first channel part in the parts table.
Click the Set Type button.
Choose Martin->Mac Viper Profile
Look at the pan and tilt at the bottom of the list of subchannels.
There is no separate listing for fine. Coarse and fine are a single subchannel that uses two dmx addresses. The percentage setting of the subchannel in LXConsole is converted to 16bits when it is output.
