Is there a way, once i have adjusted and recorded a CUE using a nanocontrol's fader, to put it back to zero without affecting the new level i have just recorded ?

The fader is just controlling a submaster. Changing the level of the submaster will not change any recorded preset. But, I think you are asking about the live output:
If you GO to the recorded cue then levels won't change when you lower the fader.
Submasters are HTP for intensity (and optionally so for other subchannels). So if you've recorded a cue composed with faders and played it back, taking the faders out will not change the live output.
