I'm not used to use 2 universes. Let's say I have channel 1 in universe 1 and channel 1 in universe 2. How do I create channel 1 of universe 2 and make it appear in the display window.

Any channel can control any output address. So, the display has nothing directly to do with controlling the first address in the second universe.
In your display file in LXBeams, you want the channel property of your "1" channel text field to be "1" and you want the checkbox that selects the display mode to be checked.
Once you've got the display back to LXConsole, navigate to the Inspector's "Patch" tab. In the patch column for channel 1, enter "2.1".
Depending on what interface you are using to output from LXConsole, you may need to adjust the DMX Out settings. For example, if you are using Art-Net, you would click the "Configure Universes" button in the preferences window's DMX Out tab. Make sure that LXConsole's universe 2 is set to be output by Art-Net and will output to Art-Net's second universe.
