Sometimes you may have to unpatched a channel which has a lot of of the DMX addresses on your left with a lot of empty rows. Is there a way to get rid of them? (See example picture)

No, The patch table shows all the channels/parts regardless of if there is an address assigned.

That is something you decided for some reason. To change it, select the channel either by typing its number into the command line or clicking in the main display. Then choose Channel->Setup Hilited Channels. Delete all the parts of that channel that you are not using from the parts table in the channel setup window.
